recipe: hazelnut extract

(1) glass container 240 ml   glass mason jar with airtight lid 
sieve, food processor

(150g) hazelnuts   ca. 1 cup whole hazelnuts
1 cup (240 ml) vodka   any 35 percent alcohol will work
(1) vanilla bean   optional but yummy 

directions~

preheat oven to 180°
toast hazelnuts for 8-10 minutes
slice vanilla bean lengthwise & place in jar 
place hot nuts in jar
pour over vodka
close jar tight

let mixture infuse for 4-6 weeks~
agitate once/ week (shake bottle gently).

after 6 weeks:

drain hazelnuts through sieve, reserving extract   I drain the extract into a fresh jardiscard vanilla bean
crush hazelnuts in food processor until fine
press hazelnut mixture through a sieve, pressing the last of the flavour into the extract   working in small batches is easier & more effective~ 
discard hazelnut mixture
emulsify the extract by stirring gently with a sterilized spoon or drink wand
